
I know you probably weren’t expecting recipe-sharing on this blog, but I’m just so excited! This summer, we’re enjoying the fruits of my labor from our very first garden. Late this afternoon I went out and found 5 gargantuan zucchinis beneath the zucchini plant. I sent one home with Bonnie, leaving me with about 3 more zucchinis than I need for zucchini bread.
So, I jumped on Allrecipes and lo and behold, on the front page was a recipe for Zucchini Patties. They’re easy (if you have a food processor to grate the zucchini) and pretty tasty, too. The kids ate ‘em up with no fuss. They’re good with salsa or ketchup. What a great way to use up some of that surplus zucchini!
